It was a cross-sectional health study providing a large nationally representative sample of the Tunisian population and was conducted in 1996 and 1997. The sample of the survey was selected to be representative of the whole country. It was a random sample stratified at two levels (by district and then by household), taken from the database of the population, and lodging census that was carried out in 1994. At baseline, 1800 households situated at 300 districts of 6 households each were included.

The dataset was anonymized using Statistical Disclosure methods by the Data Dissemination Team of the Statistics division at FAO. All direct identifiers have been removed prior to data submission.

In this study, dietary intake was assessed using a 3-day food record (two weekdays and one weekend day) to collect the types and amounts of the meals, foods and beverages consumed. Trained dieticians visited the selected households to give participants detailed information about the objectives and the process of the survey, and instructions on how to record the amount of foods consumed using household tableware. Dieticians insist on the respondents not changing their eating habits.
The first step of the 3-day food record was self-administered by the subjects at home. The day of the survey, dieticians reviewed unclear descriptions, errors, omissions, or doubtful entries in the filled pre-printed form and asked the participants to clarify them. For each dish, a list of ingredients, the estimated weight of the raw edible portion and method of preparation were collected from the women in charge of food preparation. We asked for the state of the food consumed (as purchased, raw edible part, cooked edible portion). The accuracy of portion size of consumed foods was checked using photos of food portions and known weight/specific portions.
